For this month international food challenge host by briju. she selected austrian recipes. From out of the four recipes i choose austrian dumplings.
Recipe adapted from : ndtv cooks
Ingredients :
. Paneer - 200 g
. Flour - 1 tbsp
. Semolina - 1 tbsp
. Couscous - 1 tbsp
. Salt - a pinch
. Lemon - 1/2
. Carrots - 100 g
. Ginger - 1/2 inch piece
. Raisins - 10 - 12
Method :
1. Squeeze and mash the paneer. Add semolina, flour, couscous, salt and lemon juice. Mix well. Once the dough is ready , keep refrigerator for 1 hour.
2. Rub a little flour on your hands and on work surface to ensure that the dough does not stick to either.
3. Take a ball of dough and flatten it. Fill it with mixture of carrot, raisin and ginger.
4. With a little bit of oil and seal the dough back together with the filling inside.
5. Rub dumplings in bit of flour to ensure that it does not stick.
6. Drop them gently in boiling water ( simmering ).
7. When dropped in boiling water they will instantly down. Once cooked they will float back up to the surface. Pull them out of water.
8. Roll in bread crumbs or flax seeds.
9. Or serve it with some chocolate sauce.
