CHEMMEEN UNDAPUTTU ( PRAWNS STUFFED UNDAPUTTU )



Ingredients :

. Rice powder - 2 cup
. Water - 2 cup
. Salt - to taste
. Shredded coconut

For prawns masala :

. Prawns - 1/2 k
. Onion - 3
. Green chilly - 2
. Ginger garlic paste - 1 tsp
. Curry leaves
. Oil
. Kashmiri chilly powder - 2 1/2 spoon
. Turmeric powder
. Garam masala - 1/2 tsp

1. Cook the prawns with some turmeric powder and salt.

2. Heat oil in a pan. Saute onion, till golden brown. Add ginger garlic paste, curry leaves, green chilly and salt. Saute well.

3. Add chilly powder, turmeric powder and garam masala. Fry well over low flame.

4. Add prawns. Mix well until all the masala coat well. Add 2 tbsp water. Mix well.



Method :

1. Boil water along with salt.

2. Stir in the rice flour over low flame. Stir well with the help of the back side of the laddle. Make a stiff paste.



3. Remove from flame and knead to form a soft dough.

4. Form into small lemon sized balls.



5. Now flatten it with handa.



6  Fill with 1 tbsp prawns masala.



7. Pull the edges close and re roll into a neat ball.

8. Roll this ball in shredded coconut.



9. Steam for 20 - 25 minutes until it done.



10. Serve with a hot cup of tea.

CHEMMEEN PUTTU

       




Ingredients :

. Prawns - 1 cup [ i used small prawns ]
. Onion - 3 not too big
. Tomato - 1/2 of a small one
. Green chilli - 2 
. Curry leaves
. Salt
. Ginger - 1/2 tsp
. Garlic - 1/2 tsp
. Kashmiri chilly powder 2 tbsp
. Turmeric powder - 1/2 tsp
. Pepper  powder 1 tsp
. Garam masala - 1/2 t sp
. Puttu powder

Method for prawns masala...:

1. Heat some oil in a pan. Add onion, green chilly, ginger, garlic, curry leaves and salt. Saute well until the onion get brown colour.

2. Add tomato n mix well for few seconds.

3. Add turmeric powder, chilly powder, pepper powder and garam masala. Fry for 2 minutes.

4. Add prawns and stir well until the prawns are well coated with the masala.

5. Add little water into it. Cover with a lid and cook for another 5 minutes.

Method :

1. Take puttu maker.

2. Put some shredded coconut on puttu maker then 3 tb sp prawns masala, then puttu powder. Repeat the process.

3. Steam until it done.


   
4. Mix the prawns masala and puttu powder. Steam it with some shredded coconut.

FISH MAPPAS

                     

Ingredients :


. Fish - 7 or 8 pieces 
. Onion - 2 [ not too big ]
. Green chilli - 4 
. Tomato -1 1/2
. Ginger paste - 1/2 tsp
. Garlic paste - 1/2 tsp
. Curry leaves 
. Turmeric powder - 1/2 tsp
. Coriander powder - 1 tsp
. Garam masala - 1/2 tsp
. Pepper powder - 1/2 tsp
. Coconut oil or any other oil
. Vinegar - 1 1/2 tbsp
. First coconut milk  - 1 cup [ thick]
. Second coconut milk - 2 cup

Method:

1. Onion cut into lengthwise and tomato cut into round shape.

2. Cut and clean the fish pieces.

3. Marinate the fish pieces with kashmiri chilli powder, turmeric powder, garam masala and salt with little water. Keep aside for 10 minutes.

3. Shallow fry the marinated fish pieces.

4. Take a clay pot or pan. Heat some oil.

5. Add onion, salt, green chilly and curry leaves. Saute well.

6. Add ginger garlic paste. Saute till the onion get light brown colour.

7. Add 1 tomato. Stir gently.



8. Add turmeric powder, coriander powder, garam masala and pepper powder. Fry for 3 minutes at very low flame.

9. Add second coconut milk and bring to boil.

10. After boil add the fried fish pieces.

11. Cover and cook for 3-4 min at medium flame.

12. After 5 minutes turn the fish pieces very carefully.

13. Again cook for 3 or 4 minutes at medium flame.

14. Add first coconut milk, 1/2 tomato and vinegar [ tomato cutted in round shape]

15. When it is about to boil turn off the gas.

16. Remove and garnish with curry leaves.
