VANILLA BISCOTTI WITH DRY FRUITS AND CHOCOLATES



  • For this month home bakers challenge, hosted by priya suresh. She challenged with 4 different biscotti recipe. I choose plain vanilla biscotti. I extra add some chocolates and dry fruits.


  • Biscottis are twice baked cookies and they are very crunchy and crispy. The origin of biscotti is italy.  Here i add dry fruits and chocolate pieces to the simple vanilla biscotti recipe. Thats optional. I take only half of this recipe.

Ingredients :

. Butter - 6 tbsp
. Sugar - 2/3 cup
. Salt - 1/2 tsp
. Vanilla essence - 2 tsp
. Baking powder - 1 1/2 tsp
. Egg - 2
. Flour - 2 cup

Method :

1. Preheat the oven at 180 degree and lightly grease a baking sheet or foil paper.

2. Beat butter, sugar, vanilla essence and salt with an electric egg beater until soft.

3. Add eggs and beat well.




4. At low speed of your mixer add the flour and stirring until smooth. Dough will be sticky.

5. Add chopped dry fruits and chopped chocolate. Mix well with your hands. If its too sticky add some flour,  starting with tbsp.



6. Plop the dough on to a baking sheet or foil paper. Straighten the log, and smooth their top and sides.




7. Bake the dough for 25 minutes. Remove from oven.



8. Using a spray bottle filled with water, lightly spritz the logs, making sure to cover the sides and top.

9. After 5 minutes with a knife cut the log cross wise. 



10. Set the biscotti on edge on the prepared sheet.



11. Return the biscotti to the oven and bake them for 25 to 30 minutes, until they are very dry and beginning to turn golden.



11. Remove the biscotti from oven and transfer to a wire rack. Store airtight.
